Preparation
  1. In a jar, combine mayonnaise, extra virgin olive oil, Dijon mustard, white wine vinegar, maple syrup, and a pinch of salt and pepper. Shake vigorously for about 30 seconds until creamy and smooth.
  2. Heat olive oil in a skillet over medium heat. Cook seasoned chicken breasts for 15-20 minutes until they reach an internal temperature of 165℉. Let cool and dice.
  3. In a mixing bowl, layer spring mix lettuce, followed by diced chicken, sliced strawberries, crumbled goat cheese, diced cucumber, sliced red onion, pumpkin seeds, and hemp hearts.
