Preparation
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut salmon fillets lengthwise to create pockets. Brush with olive oil and season with salt and pepper.
- In a sauté pan, heat olive oil and add spinach, Italian seasoning, paprika, cayenne, salt, and pepper. Sauté for 2 minutes until wilted.
- Remove from heat and stir in roasted red peppers, feta, and parmesan cheese until well mixed.
- Stuff the salmon pockets with the spinach-feta mixture.
- Place stuffed salmon on the baking sheet and bake for 12 to 17 minutes until cooked through.
