  • 4 6-ounce Salmon Fillets Choose pieces for easy stuffing
  • 2 tablespoons Olive Oil High-quality extra virgin recommended

For the Stuffing
  • 4 cups Baby Spinach Fresh
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Paprika Regular or smoked
  • 1/4 teaspoon Cayenne Pepper Adjust for desired heat
  • 1 cup Feta Cheese Crumbled
  • 1/2 cup Parmesan Cheese Freshly grated
  • 1/2 cup Roasted Red Peppers Chopped

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut salmon fillets lengthwise to create pockets. Brush with olive oil and season with salt and pepper.
  3. In a sauté pan, heat olive oil and add spinach, Italian seasoning, paprika, cayenne, salt, and pepper. Sauté for 2 minutes until wilted.
  4. Remove from heat and stir in roasted red peppers, feta, and parmesan cheese until well mixed.
  5. Stuff the salmon pockets with the spinach-feta mixture.
  6. Place stuffed salmon on the baking sheet and bake for 12 to 17 minutes until cooked through.
