  • 200 grams Cherry tomatoes halved
  • 100 grams Cream cheese
  • 3 cloves Garlic chopped

  • 2 tablespoons Extra virgin olive oil

For Garnish
  • 2 tablespoons Fresh parsley chopped

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 180 °C (356 °F).
  2. Halve the medium-sized zucchinis lengthwise and scoop out the insides.
  3. In a mixing bowl, combine the reserved zucchini flesh, feta cheese, halved cherry tomatoes, cream cheese, and chopped garlic.
  4. Add dried oregano, a drizzle of olive oil, and salt and pepper to taste to the filling mixture.
  5. Spoon the mixture into each hollowed zucchini half and place them in a lightly oiled baking dish.
  6. Bake for 25-30 minutes or until zucchinis are tender and the filling is golden.
  7. Let them rest for about 5 minutes, then garnish with parsley before serving warm.
