  • 1/2 cup Unsalted Butter coconut oil is a great substitute
For the Topping
  • 2 cups Peaches fresh fruit topping; can substitute with mango or kiwi
  • 1 cup Mixed Berries (Strawberries, Blueberries, Raspberries) choose seasonal selections
  • Fresh Mint Leaves optional garnish

Method
 

Step-by-Step Instructions
  1. In a medium bowl, mix graham cracker crumbs, melted unsalted butter, and a bit of sugar until sandy texture and pack into 9-inch springform pan.
  2. Preheat oven to 350°F (175°C) and optionally bake crust for 8-10 minutes until golden. Cool completely.
  3. Beat softened cream cheese until smooth, gradually add sugar, vanilla extract, and lemon juice.
  4. Whip heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  5. Pour cheesecake filling over cooled crust and smooth the top.
  6. Cover with plastic wrap and refrigerate for at least 4 hours, ideally overnight.
  7. Once set, arrange peach slices and mixed berries artfully on top.
  8. Optionally scatter fresh mint leaves over the topping before serving.
  9. Release sides of the springform pan, slice, and enjoy!
