Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with foil.
  2. In a large mixing bowl, toss sweet potatoes and carrots with olive oil and roast for 30 minutes, stirring halfway.
  3. Combine chopped pecans with maple syrup in a bowl and set aside to soak.
  4. Blend roasted sweet potatoes and carrots with ginger, orange zest, juice, and coconut milk until smooth.
  5. Mix in cinnamon, nutmeg, salt, and pepper, adjusting seasoning as needed.
  6. Lower oven temperature to 350°F (175°C) and grease a 9x13-inch baking dish. Spread the mixture and top with maple pecans, bake for 40 minutes.
  7. Cool for 5 minutes before serving.
