Step-by-Step Instructions
  1. Prepare Marinade: In a large bowl, combine brown sugar, minced garlic, pineapple juice, soy sauce, vinegar, salt, ground black pepper, and optional red food coloring. Whisk until the sugar is dissolved.
  2. Marinate Pork: Slice pork into thin pieces, coat with marinade, and refrigerate for at least 4 hours, preferably overnight.
  3. Cook Pork: Heat a non-stick pan over medium heat, add marinated pork, and cook undisturbed for 3-4 minutes until caramelized.
  4. Finish Cooking: Stir and reduce heat to low. Cook for 10-15 minutes until the marinade thickens and reaches an internal temperature of 145°F.
  5. Serve: Let rest, then serve hot with garlic fried rice and a fried egg.
