  • 3 tablespoons Semolina All-purpose flour can be used if unavailable.
  • 2 tablespoons Oil For frying, can use canola or vegetable oil.

  • 1 teaspoon Lemon Zest For added brightness.
  • 1/4 cup Raisins Adds sweetness.

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine cottage cheese, egg, sour cream, sugar, and 1 tablespoon of semolina. Mix gently using a fork until the mixture is smooth. Cover and chill in the refrigerator for 30 minutes.
  2. After chilling, take about 1/4 cup of the batter and, with lightly floured hands, shape it into a thick, round pancake, about ½ inch thick. Dust both sides with flour and freeze for 10 minutes.
  3. Heat a non-stick skillet over medium heat and add oil. Place frozen pancakes in the skillet and fry each side for about 4–5 minutes until golden brown and crispy.
  4. Transfer the fried syrniki to a warm plate and serve immediately with sour cream, yogurt, fresh jam, or powdered sugar.
