  • 1 medium Bell Pepper chopped

  • 1 tsp Freshly Ground Black Pepper to taste
  • 2 tbsp Chili Powder or taco seasoning
  • 3 tbsp All-Purpose Flour omit for gluten-free
  • 1 tsp Ground Cumin optional
  • 1 15-oz can Black Beans drained and rinsed
  • 1 15-oz jar Medium Salsa adjust spiciness to preference
For the Layers
  • 6 8-inch Flour Tortillas or corn tortillas for gluten-free
  • 2 cups Sharp Cheddar Cheese shredded
  • 1 cup Pepper Jack Cheese shredded
  • 1 14.75-oz can Creamed Corn or sweet corn
For Garnishing
  • 1 cup Sour Cream or Greek yogurt
  • 1 cup Chopped Tomatoes
  • 1/4 cup Chopped Fresh Cilantro

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 13"x9" baking dish with vegetable oil.
  2. In a large skillet, heat a drizzle of vegetable oil over medium heat. Add chopped onion and bell pepper, stirring occasionally for about 5–7 minutes until tender.
  3. Add minced garlic and ground beef, breaking up the meat. Cook for about 8–10 minutes until browned and fat is drained.
  4. Sprinkle in chili powder, ground cumin, and flour. Stir for a minute, allowing the spices to bloom.
  5. Incorporate black beans, salsa, and a splash of water. Let simmer for about 5 minutes.
  6. In the greased baking dish, layer meat mixture, flour tortillas, sharp cheddar, pepper jack, and creamed corn. Repeat layers and finish with tortillas and cheese.
  7. Bake for 30 minutes until bubbly with a golden cheesy top.
  8. Let cool for 5 minutes, garnish with tomatoes, cilantro, and sour cream. Serve warm.
