- Begin by patting the pork ribs dry with paper towels, ensuring they’re free of moisture. Generously apply the smoky spice dry rub evenly over the entire surface of the ribs, rubbing it in for maximum flavor. For optimal results, allow the ribs to marinate in the refrigerator for at least 1 hour, or preferably overnight to let those delicious flavors permeate.
