Step‑by‑Step Instructions
  1. Heat olive oil in a skillet over medium heat. Sauté diced onion until translucent, about 5 minutes.
  2. Add minced garlic and cook for 1-2 minutes, stirring continuously.
  3. Stir in cherry tomatoes and crushed red pepper flakes, cooking until tomatoes burst, about 4-5 minutes.
  4. Fold in drained butter beans, stirring to coat, and cook for 2 minutes.
  5. Pour in vegetable broth and simmer for 5 minutes.
  6. Stir in heavy cream and Parmesan cheese, cooking for 3-4 minutes until thickened.
  7. Season with salt and pepper, adding more broth if necessary.
  8. Add chopped herbs and lemon zest and juice, mixing well.
  9. Serve warm, garnished with extra Parmesan and herbs.
