- Flake the drained tuna into a mixing bowl. Add mayonnaise, minced onion, chopped celery, sweet pickle relish, lemon juice, salt, and pepper. Stir until well combined.
- Spread extra mayonnaise on one side of each slice of bread. Heat a skillet over medium heat and place the slices of bread mayonnaise-side down. Add a slice of cheese on each piece, followed by the tuna filling.
- Place another slice of cheese on top of the tuna mix, then cover with the remaining bread, mayonnaise side facing up.
- Cook the sandwiches for about 3-4 minutes until the bottom turns golden brown.
- Flip each sandwich and continue cooking for another 3-4 minutes until both sides are golden brown and the cheese is melted.
- Remove the sandwiches from the skillet, let cool slightly, then slice in half and serve warm.
