  • 1 teaspoon Onion Powder optional depth of flavor
  • to taste Black Pepper for kick of seasoning
For the Croutons
  • 2-4 slices Old Bread day old for crispy texture

Method
 

Preparation
  1. Step 1: Roast Garlic - Preheat the oven to 200°C (400°F). Peel garlic cloves, place on a tray with olive oil and salt, and roast for 15-20 minutes until golden.
  2. Step 2: Cook Potatoes - Wash, peel, and cube potatoes. Boil in salted water for about 15 minutes until tender, then drain.
  3. Step 3: Blend Soup - In a blender, combine potatoes and roasted garlic (discard oil). Add broth, soy cream, nutritional yeast, onion powder, and black pepper. Blend until smooth.
  4. Step 4: Make Croutons - Preheat the oven to 180°C (350°F). Cube old bread, toss with olive oil and black pepper, and bake for approximately 10 minutes or until crispy.
  5. Step 5: Serve - Ladle soup into bowls and top with a drizzle of soy cream and crispy croutons. Enjoy warm.
