- Peel and chop the potatoes, then boil in salted water until fork-tender (20 minutes). Drain and let sit to evaporate moisture.
- Mash the drained potatoes until smooth, mix in flour, vegan butter, garlic powder, salt, and nutmeg. Set aside to cool.
- Preheat your oven to 200°C (392°F). Prepare three shallow bowls: one with plant milk, one with flour, and one with breadcrumbs.
- Scoop about 28 grams of the mixture to shape croquettes (2-3 inches long). Aim for around 30 croquettes and place on a lined baking sheet.
- Coat each croquette with flour, then plant milk, and finally breadcrumbs, ensuring even coverage.
- Arrange coated croquettes on a baking sheet, spritz with cooking spray, and bake for about 20 minutes, turning halfway.
- Remove from oven, allow to cool slightly, and serve with dipping sauce.
