  • 4 tablespoons Extra-Virgin Olive Oil
For the Salad
  • 2 cups Roasted/Canned Beets Diced
  • 1 medium Cucumber Thinly sliced
  • 1 cup Feta Cheese Crumbled
  • 1/4 cup Fresh Dill Chopped

Method
 

Preparation Steps
  1. In a small bowl, whisk together fresh lemon juice and kosher salt until dissolved. Gradually drizzle in olive oil, whisking until emulsified.

  3. Before serving, add cucumber, feta, and dill to the marinated beets, then pour in remaining vinaigrette.
  4. Gently toss the salad ingredients together using a large spoon to mix while keeping feta chunks intact.
