Step-by-Step Instructions
  1. In a large mixing bowl, combine shredded chicken, cream cheese, diced sausage (if using), chopped green onions, shredded cheddar cheese, hot sauce, and Cajun seasoning. Mix well until all ingredients are thoroughly blended.
  2. Lay an egg roll wrapper flat on a clean surface. Place about 2 tablespoons of the filling mixture in the center. Fold the corner over, tuck in the sides, and roll tightly. Seal with a bit of beaten egg.
  3. In a deep skillet, pour enough vegetable oil to reach a depth of 2 inches. Heat the oil over medium heat until it reaches 350°F (175°C).
  4. Carefully lower the assembled egg rolls into the hot oil in batches. Fry for 3 to 4 minutes until golden brown and crispy. Drain on paper towels.
  5. Serve hot with your choice of dipping sauce and garnish with chopped green onions.
