  • 1 Onion Chop finely
  • 1 packet Taco Seasoning Or use homemade
  • 1 cup Water
  • 1 can Black Beans Drained and rinsed
  • 1 can Diced Tomatoes with Green Chiles Or plain diced tomatoes
  • 1 cup Sour Cream Greek yogurt can be substituted
  • 6 oz Fritos Corn Chips Can substitute with Doritos or tortilla chips
  • 2 cups Mexican-Style Shredded Cheese Or Monterey Jack or Cheddar
For the Toppings
  • 2 Green Onions Chopped finely
  • 1 cup Sour Cream For serving
  • 1 cup Guacamole
  • 1 cup Salsa
  • 1 Jalapenos To taste

Method
 

Step-by-Step Instructions for Walking Taco Casserole
  1. Preheat your oven to 350°F (175°C). Gather your baking dish and cooking utensils.
  2. In a large skillet over medium heat, cook the ground beef until browned, about 5–7 minutes. Add the chopped onion and cook until translucent, about 3–4 minutes. Stir in the taco seasoning and water, simmering for 2–3 minutes, then mix in the black beans, diced tomatoes with green chiles, and sour cream until well-combined.
  3. Layer Fritos in the bottom of the baking dish, followed by half of the shredded cheese. Top with the meat mixture, then add the remaining cheese on top.
  4. Cover with foil and bake for 15 minutes. Remove the foil and bake for another 5 minutes or until cheese is bubbly and golden.
  5. Let casserole cool slightly and serve with Fritos and desired toppings like green onions, sour cream, guacamole, salsa, and jalapenos.
