  • 8 oz Capellini Pasta substitute with gluten-free spaghetti if desired
  • 2 small Lemons or 1 large lemon for juicing
  • 2 tbsp Capers small pickled ones preferred
  • 12 leaves Fresh Basil roughly torn for aroma
  • 1/2 cup Parmesan Cheese freshly grated is best
  • 1 cup Grape Tomatoes halved
  • 1/4 cup Olive Oil extra virgin recommended
  • 1 tsp Garlic Powder
  • 1 tsp Salt for boiling pasta water
For Serving
  • 1 each Lemon Wedges for adding extra brightness
  • 1/4 cup Additional Parmesan for serving

Method
 

Step-by-Step Instructions
  1. Cook the pasta in salted boiling water until al dente, about 2-3 minutes. Drain and cool slightly.
  2. Prepare the dressing by whisking lemon juice, olive oil, garlic powder, and salt in a bowl.
  3. Combine cooled pasta with the dressing in a large bowl, tossing gently.
  4. Fold in halved grape tomatoes, capers, and Parmesan cheese.
  5. Chill in the refrigerator for at least one hour.
  6. Stir in fresh basil and serve with lemon wedges and additional Parmesan.
