Step-by-Step Instructions
  1. Warm Spices and Chickpeas: In a nonstick skillet, heat 2 tablespoons of extra-virgin olive oil over low heat. Add garlic, cumin, coriander, salt, and red pepper flakes. Stir and let sizzle for about 1 minute, then add chickpeas. Warm through for approximately 3 minutes, then remove from heat.
  2. Prep Couscous: In a large mixing bowl, combine couscous. Pour boiling water over it, cover with a plate to trap steam, and let sit undisturbed for 5 minutes. Fluff with a fork and mix in fresh lemon juice.
