  • 1 cup Powdered Sugar Can swap for a sugar alternative
  • 1 tbsp Lemon Juice Freshly squeezed for best results

Step-by-Step Instructions
  1. Make the Lemon Curd (if homemade): Whisk egg yolks, sugar, lemon zest, and lemon juice in a heatproof bowl over simmering water for about 10 minutes. Stir in unsalted butter until melted and cool in the refrigerator.
  2. Prepare the Streusel Topping: Combine granulated sugar, brown sugar, all-purpose flour, and cold unsalted butter in a bowl; mix until crumbly and chill.
  3. Mix the Muffin Batter: Beat unsalted butter and granulated sugar until fluffy. Add eggs, Greek yogurt, lemon zest, and lemon juice; blend until combined.
  4. Combine Dry Ingredients: Whisk flour, baking powder, and salt in a separate bowl. Fold into wet mixture until no dry flour remains; avoid overmixing.
  5. Fill Muffin Tins: Preheat oven to 375°F (190°C). Line muffin tin and fill cups with batter. Add a dollop of lemon curd and top with streusel.
  6. Bake: Bake for 25-26 minutes until golden brown and a toothpick comes out clean.
  7. Glaze & Serve: Cool muffins, whisk together powdered sugar and lemon juice for glaze, and drizzle over muffins before serving.
