Preparation Steps
- In a food processor, combine 1 tablespoon of vegetable oil, 3 tablespoons of soy sauce, 3 tablespoons of brown sugar, and 2 tablespoons of lemon juice. Add in 2 minced garlic cloves, 2 teaspoons of grated fresh ginger, 1 whole red chilli, and 1 stalk of roughly chopped lemongrass. Blend until smooth to create marinade.
- Place chicken wings in a bowl and pour marinade over, coating well. Cover and refrigerate for at least 30 minutes, or overnight for best results.
- Preheat air fryer to 200°C (390°F). Prepare to load marinated chicken wings in a single layer.
- Carefully arrange chicken wings in the air fryer basket. Cook at 200°C (390°F) for 15-20 minutes, flipping halfway.
- While wings cook, toast 1 cup of chopped peanuts in a dry pan over medium heat for about 5 minutes until golden brown.
- Once wings are caramelized, remove from air fryer and serve hot, topped with toasted peanuts, spring onions, and optional red chilli.
