  • 1 medium Jalapeño finely diced
  • 2 cloves Garlic grated
  • 1 tablespoon Maple Syrup or honey
  • 1 teaspoon Kosher Salt
For the Meat
  • 2 pounds Pork Shoulder
  • 1.5 pounds Chicken Thighs
  • 1.5 pounds Flank Steak

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine coarsely chopped fresh pineapple, finely diced jalapeño, and grated garlic. Stir in maple syrup and kosher salt. Mix well for about a minute until thoroughly incorporated.
  2. Place your choice of meat in a resealable plastic bag or shallow dish. Pour the Pineapple-Jalapeño Marinade evenly over the meat, ensuring it’s well-coated. Seal the bag or cover the dish, and refrigerate for up to 2 hours.
  3. While the meat marinates, preheat your grill to medium-high heat, about 375°F (190°C).
  4. Once the grill is ready, remove the marinated meat from the refrigerator and let it sit at room temperature for about 10 minutes. Grill according to your preferred doneness.
  5. After grilling, transfer the meat to a cutting board and let it rest for 5 minutes. Slice and serve with your favorite sides.
