- In a mixing bowl, combine coarsely chopped fresh pineapple, finely diced jalapeño, and grated garlic. Stir in maple syrup and kosher salt. Mix well for about a minute until thoroughly incorporated.
- Place your choice of meat in a resealable plastic bag or shallow dish. Pour the Pineapple-Jalapeño Marinade evenly over the meat, ensuring it’s well-coated. Seal the bag or cover the dish, and refrigerate for up to 2 hours.
- While the meat marinates, preheat your grill to medium-high heat, about 375°F (190°C).
- Once the grill is ready, remove the marinated meat from the refrigerator and let it sit at room temperature for about 10 minutes. Grill according to your preferred doneness.
- After grilling, transfer the meat to a cutting board and let it rest for 5 minutes. Slice and serve with your favorite sides.
