Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C). Gather your ingredients and equipment.
  2. In a food processor, combine flour, sifted icing sugar, salt, grapefruit zest, and thyme. Pulse until well combined.
  3. Add cold unsalted vegan butter cut into cubes and pulse until a rough dough forms.
  4. Press the dough evenly into a 9-inch fluted tart pan.
  5. Bake for 35 to 40 minutes until firm and slightly golden around the edges.
  6. Cool slightly for about 10 minutes, then cut into 16 pieces and let cool completely.
  7. In a mixing bowl, combine grapefruit juice with sifted icing sugar to desired consistency, adding food coloring if desired.
  8. Dip the tops of cooled cookies into icing and place on a wire rack to dry.
  9. Garnish with fresh thyme leaves or a sprinkle of pearl sugar and allow to set.
