Preparation Steps
  1. In a small saucepan, bring 1/2 cup of water to a rolling boil. Add in honey, finely sliced fresh ginger, and a pinch of cayenne pepper. Once the mixture reaches a boil, reduce heat and let it simmer for 1-2 minutes. Remove from heat, add mint leaves, cover, and steep for 10 minutes until fragrant. Strain out solids and set syrup aside.
  2. To create a sweet and spicy rim, combine coarse sugar, granulated sugar, and a pinch of cayenne on a plate. Moisten the rim of your glass with lime juice and dip it into the sugar mixture for an even coating.
  3. Fill the rimmed glass generously with ice cubes. Pour in pomegranate juice, followed by grapefruit juice and lime juice. Add spicy ginger syrup, stir gently, and pour in tequila if desired.
  4. Top with ginger beer, filling the glass to the brim. Garnish with fresh mint leaves or pomegranate seeds for visual appeal.
