Step-by-Step Instructions
  1. Boil Water: Pour 1¼ cups of water into a medium pot, seasoning it with ¾ teaspoon of kosher salt. Bring to a rapid boil.
  2. Cook Couscous: Add the couscous to the boiling water, stir gently, cover, and let sit for 5 minutes.
  3. Prepare the Dressing: In a bowl, whisk together the dressing ingredients.
  4. Fluff Couscous: Fluff the couscous with a fork and transfer to the bowl with dressing. Mix to coat evenly.
  5. Add Vegetables: Fold in arugula, parsley, cucumber, avocado, cherry tomatoes, and corn.
  6. Incorporate Feta: Crumble feta into the salad and gently mix.
  7. Chill and Serve: Cover and chill for 30 minutes before serving.
