Preparation Steps
  1. Begin by slicing the Persian cucumbers thinly and place them in a colander. Sprinkle with salt and let sit for about 10 minutes.
  2. In a small microwave-safe bowl, combine rice vinegar and sugar. Heat in the microwave for 30 seconds to dissolve the sugar completely.
  3. In a large mixing bowl, combine the sliced cucumbers and thinly sliced red onion. Pour the dressing over the mixture and add chopped cilantro. Toss gently.
  4. Cover with plastic wrap or a lid and chill for at least 20 minutes in the refrigerator.
