Ingredients
  

Tzatziki Dressing
  • 1 cup Greek Yogurt substitute with dairy-free yogurt for a vegan option
  • 0.5 cup Cucumber diced
  • 2 tablespoons Olive Oil can replace with avocado oil if desired
  • 1 unit Lemon Juice juice of 1 lemon
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Dill traditional in tzatziki sauce
  • Salt and Pepper to taste
Salad
  • 2 pieces Grilled Chicken Breasts or use rotisserie chicken
  • 1 cup Cherry Tomatoes halved
  • 1 cup Bell Peppers diced
  • 0.25 cup Red Onion thinly sliced
  • 0.25 cup Fresh Parsley for garnish

Method
 

Tzatziki Preparation
  1. In a medium bowl, combine Greek yogurt, diced cucumber, olive oil, lemon juice, minced garlic, dried dill, and salt and pepper. Mix thoroughly until smooth.
  2. Set this tzatziki dressing aside to allow the flavors to meld.
Chicken Grilling
  1. Preheat your grill to medium-high heat. Season grilled chicken breasts with salt and pepper. Grill for 7-10 minutes on each side until fully cooked.
  2. Remove chicken from the grill and let it rest for a few minutes before slicing it into bite-sized pieces.
Salad Mixing
  1. In a large mixing bowl, combine sliced grilled chicken, halved cherry tomatoes, diced bell peppers, and thinly sliced red onion. Gently mix these ingredients.
Final Assembly
  1. Pour the tzatziki sauce over the chicken and vegetable mixture. Use a spatula to gently toss everything together.
  2. If desired, cover and refrigerate for about 10 minutes before serving.
Serving
  1. Before serving, sprinkle freshly chopped parsley over the salad.
  2. Serve the salad chilled.
