Step‑by‑Step Instructions
  1. Preheat the oven to 350°F (177°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, combine the all-purpose flour, baking powder, baking soda, and salt.
  3. Cream together the unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add in the egg and vanilla extract, mixing until smooth and well combined.
  5. Slowly add the dry ingredient mixture to the wet ingredients, mixing until just combined.
  6. Divide the cookie dough in half and mix ube extract into one half.
  7. Scoop 2 tablespoons of ube dough and 1 tablespoon of vanilla dough, rolling them into balls.
