- In a skillet over medium heat, crack 4-6 fresh eggs and scramble until just set, about 3-4 minutes. Add crispy bacon and cheese, stirring until melted.
- Lay out tortillas, place a scoop of the egg mixture in the center, fold in the sides, and roll tightly. Seal edges with water or egg wash.
- Heat 2 tablespoons of oil in a skillet, add rolled tortillas seam-side down, fry for 3-4 minutes until golden brown, then flip and cook the other side.
- Transfer cooked rolls to a paper towel-lined plate. Serve hot with fresh fruit or salsa.
