  • 1 teaspoon Thyme
  • 2 tablespoons Parsley Chopped, substitute with dill or mint if preferred.
  • 1 to taste Black Pepper Freshly ground for best flavor.
Pastry
  • 375 grams Puff Pastry Store-bought for convenience.
  • 1 large Egg Beaten, for brushing.
  • 2 tablespoons Olive Oil Extra virgin recommended.
  • ¼ cup Flour For rolling.
Optional Toppings
  • 1 tablespoon Sesame Seeds Or Nigella Seeds for crunch.

Method
 

Preparation Steps
  1. Start by patting the feta cheese dry with paper towels to remove excess moisture.
  2. In a medium bowl, combine olive oil, minced garlic, chili flakes, oregano, thyme, and chopped parsley. Season with black pepper.
  3. Coat the feta blocks in the marinade and let marinate for at least 15 minutes.
  4. Roll out the puff pastry on a floured surface to about ¼ inch thickness and preheat the oven to 200°C (392°F).
  5. Slice the pastry into strips roughly 3 inches wide.
  6. Wrap a marinated feta block in each pastry strip and seal the edges.
  7. Line a baking sheet with parchment paper and place the wrapped rolls seam-side down.
  8. Brush the tops of the rolls with beaten egg for a golden sheen.
  9. Sprinkle with optional sesame or nigella seeds if desired.
  10. Bake for 15-20 minutes or until golden and crispy.
  11. Cool slightly before serving warm.
