  1. Preheat your oven to 400°F (200°C). Peel the garlic cloves and arrange them on a baking sheet, drizzling with olive oil. Roast for about 30 minutes until golden and soft.
  2. In a medium pot, combine the roasted garlic with chicken stock, fresh sage leaves, and a spoon of Dijon mustard. Simmer for about 10 minutes.
  3. Remove the sage leaves, transfer the soup into a blender, and blend until silky. Drizzle in extra virgin olive oil for creaminess.
