Step-by-Step Instructions
  1. Season the chicken breasts with salt and pepper. In a skillet, heat olive oil and cook chicken for 5-6 minutes on each side until cooked through. Remove and let rest.
  2. Boil salted water and cook pasta according to package instructions until al dente, about 8-10 minutes. Drain and toss with olive oil.
  3. In the same skillet, melt salted butter, add minced garlic, and sauté until fragrant, about 1 minute.
  4. Add chicken broth to deglaze the pan. Stir in thyme, sage, pumpkin purée, heavy cream, Parmesan, and mozzarella. Let simmer for 3-4 minutes.
  5. Return chicken, sliced into pieces, to the skillet. Add cooked pasta and toss everything together, cooking for an additional 2-3 minutes.
