Step-by-Step Instructions
  1. Prepare the Broth: Boil water for noodles. In a pot, combine chicken broth, ginger, red chilies, fish sauce, and sugar. Bring to a boil, then simmer for 15 minutes.
  2. Sear the Chicken: Season chicken with salt and pepper. In a skillet, heat oil and sear chicken for 5-6 minutes per side. Remove and let it rest.
  3. Cook the Noodles: In boiling water, cook pho noodles for 5-6 minutes until al dente. Drain and rinse with cold water.
  4. Assemble the Bowls: Divide noodles into bowls, ladle broth over them, and top with sliced chicken.
  5. Garnish and Serve: Add bean sprouts, fresh herbs, and lime wedges to each bowl. Serve immediately.
