For the Cod
  • 4 loins cod Ensure they are fresh.

Method
 

Marinating and Cooking
  1. In a medium bowl, whisk together miso paste, brown sugar, rice vinegar, and sesame oil until smooth. Add minced garlic.
  2. Coat cod loins in the miso marinade and refrigerate for at least 1 hour.
  3. Heat vegetable oil in a non-stick skillet over medium heat. Cook cod skin-side down for 3-4 minutes.
  4. Pour remaining marinade over the cod, cover, and cook for an additional 3 minutes.
  5. Flip the cod and turn up the heat. Cook for 1 more minute while spooning marinade over it.
  6. Remove from heat, garnish with spring onions, and serve.
