Marinating and Cooking
- In a medium bowl, whisk together miso paste, brown sugar, rice vinegar, and sesame oil until smooth. Add minced garlic.
- Coat cod loins in the miso marinade and refrigerate for at least 1 hour.
- Heat vegetable oil in a non-stick skillet over medium heat. Cook cod skin-side down for 3-4 minutes.
- Pour remaining marinade over the cod, cover, and cook for an additional 3 minutes.
- Flip the cod and turn up the heat. Cook for 1 more minute while spooning marinade over it.
- Remove from heat, garnish with spring onions, and serve.
