  • 1 cup shredded cheese Preferably use block cheese for better melting; choices include Colby Jack or Cheddar.

  • 8 fajita size flour tortillas Smaller or larger tortillas can be used based on preference.

Preparation Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. In a large skillet over medium heat, brown and crumble 1 pound of lean ground beef until it's no longer pink, about 6-8 minutes. Drain excess grease and let cool slightly.
  3. Return the beef to the skillet and stir in mild taco seasoning, light brown sugar, softened cream cheese, and sour cream. Mix for 2-3 minutes until creamy.
  4. Remove from heat and stir in salsa and shredded cheese until melted and combined.
  5. Microwave tortillas for about 30 seconds until warm and pliable.
  6. On each tortilla, place a scoop of the ground beef mixture, roll tightly, and place seam-side down on the baking sheet.
  7. Lightly spray tops with cooking spray and bake for 15 minutes or until golden brown.
  8. Let cool for a minute before serving with dipping sauces.
