Ingredients
  

For the Filling
  • 4 cups Fresh Spinach Leaves can substitute with frozen spinach (thawed and drained)
  • 1 cup Crumbled Feta Cheese substitute with goat cheese for a different flavor profile
  • 1 cup Shredded Mozzarella Cheese use provolone or cheddar for variation
  • 1 cup Chopped Onions shallots could be used instead
  • 2 cloves Garlic (minced) garlic powder can be an alternative
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For the Tortillas
  • 4 large Flour Tortillas whole wheat or gluten-free tortillas are good alternatives
  • 1 tablespoon Olive Oil can substitute with butter for richer flavor
  • 2 tablespoons Butter margarine can be a suitable substitute

Method
 

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onions and minced garlic, sautéing for 2-3 minutes until they become translucent and aromatic.
  2. Once the onions and garlic are ready, add in the fresh spinach leaves to the skillet. Cook this mixture for about 2 minutes, stirring until the spinach wilts down significantly. Season with a pinch of salt and black pepper.
  3. Take a large flour tortilla and lay it flat. Spoon a quarter of the spinach mixture over half of the tortilla, then sprinkle crumbled feta and shredded mozzarella over the spinach. Fold the tortilla in half.
  4. In the same skillet, melt half of the remaining butter over medium heat. Place the folded quesadilla in the skillet and cook for 3-4 minutes until golden brown, then flip and cook the other side.
  5. Remove the quesadilla from the skillet and let it rest for 1 minute before slicing it into wedges. Serve immediately.
